A delicious and healthy vegetarian dish

A high-protein, vegetarian meal that is as appealing to the eye as it is delicious!

My youngest is a vegetarian and I often struggle with healthy and delicious food options for her.

I have been able to adapt some standby recipes by changing out chicken or beef stock for vegetable stock. Finding more vegetarian dishes to incorporate into family meals is a work in progress. Recently, my daughter introduced the entire family to a delicious and satisfying dish that she often prepares for dinner in her NYC apartment that she shares with her wonderful boyfriend. They usually prepare the farro ahead of time, allowing for quick and easy assembly of a healthy and filling meal after a long day of work.

Farro Bowl (serves 4)

  • 1 large sweet onion
  • 1 (7oz.) container baby spinach
  • 1  pint of cherry tomatoes
  • 1 C feta
  • 2 avocados
  • 4 over-easy eggs
  • 2 cups uncooked Farro

Sumac Dressing

  • ½ tsp sumac*
  • 1 Tbsp lemon juice
  • ¼ C red wine vinegar
  • ⅔ C extra-virgin olive oil
  • 1 tsp kosher salt
  • ¼ tsp cracked black pepper

* Ground sumac is a versatile spice with a tangy lemony flavor, although more balanced and less tart than lemon juice. If you are lucky, sumac will be found in the spice aisle of your grocery store. It is definitely available on Amazon—search sumac spice.

Cook farro following package directions. Saute onion and baby spinach. Combine ingredients in 4 bowls placing egg on the top. Dress with the sumac dressing. Enjoy! You may want to store extra sumac dressing in a container to use on other foods—it’s also delicious as a salad dressing.
